Since its inception, the history of El Maestro Sierra is one of self-improvement, non-conformity, and a firm desire to fight for a clear goal that has challenged the established norms of the local wine business in Jerez. Master cooper José
Antonio Sierra founded the winery in 1830. Recognized as one of the top coopers in Jerez, he desired to be directly involved in the sherry trade and so started aging wine in his own barrels.
El Maestro Sierra was passed down through the family and protected by the legendary Doña Pilar Pla Pechovierto from 1976 until her passing in 2020. She was a brave and resolute woman who inherited the business after the early death of her husband, Antonio Borrego. Pilar managed to drive the business forward despite the prevailing machismo of the time. El Maestro Sierra was the first and is still one of the few bodegas run entirely by women.
The winery is owned by Pilar’s daughter Dr. Carmen Borrego Pla and the wines are made by capataza Ana Cabestrero who has been responsible for overseeing the Sherry stocks since 2011. Ana adheres to traditional, artisanal methods of cellar management: foregoing electric pumps to “run the scales” manually, no filtration, hand bottling and labeling of the old sherries, and honoring the tradition of José Antonio Sierra with an in-house cooper to maintain the barrels dating back to El Maestro Sierra’s founding.
