A base of dutch apple cider from the previous fall is racked over Opal plums during the summer for a maceration and refermentation. The cider is bottled unfined, unfiltered, and without any added sulfur. Opals are early-ripening, lovely little tart round plums of a mottled yellow/red/orange color, which gives this cider serious sunset vibes.
