: "Against the grain is a Graff: a hybrid of cider and beer. This version is spontaneously fermented at Elegast cidery with wild yeasts from the orchard. After that, part of the graff has matured on wood and has been blended again. With this handmade graff, Elegast gives a new and sustainable destination to apples from unsprayed standard orchards. Nevel works with local sustainably grown ingredients and, also in this product, with old grain varieties." A Graff is a type of beverage with a very long history in central and northern Europe, but it's never really made it into the serious consideration of the beverage industry, which is kind of silly and I attest has to do with various class-based assumptions about which beverages deserve our thought and which don't. This graff is made with all Dutch-grown heritage grains and apples.
