Also known in France as Boule de Lille, this cheese is very similar to Holland's Edam. Made from cow's milk, it has a dark orange, aroma less rind and goes well with beer and cider.
With it's distinctive orange hue, Mimolette is a hard cave-aged French cheese that was developed to complete with the classic Dutch Gouda back in the 17th century. The particular color develops from a rub with Annatto. Aged for 6 months, this is a Mimolette, and it develops a great nutty and mildly sharp flavor. Produced by Isigny Ste-Mere, a cooperative of farmers in Normandy, which has been producing it with delicious results since 1932.
